Cab and Steak Night

After our intense x-country ski workout, we were ravenous and eagerly looking forward to our Napa Cab and Flannery steak tasting at David’s.

He outdone himself this time, with both an amazing selection of old cabs and food: cheese, cauliflower risotto with cocoa jelly, and sous vide then flame broiled strip steak and rib eye for the entrees, and blue cheese and chai tea pudding for dessert. 😀

Louis M. Martini Cabernet Sauvignon 1974
Think this wine over the hill already. Color more brown than red, without a remarkable nose or body, though not oxidized.

Freemark Abbey Cabernet Sauvignon 1980
Now this tasted fantastically alive and fresh in comparison! I wouldn’t have guessed it a 31-yo wine. It was delicious with silky tannins!

Joseph Phelps Insignia 1997
Another big, explosive wine. Tons of red fruit, pencil shavings, mushroom. Just gorgeous. Probably could stand another decade in the cellar easy.

Robert Mondavi Cabernet Reserve 1995
Excellent example of the high-end Mondavis.
